Yield: 12 Appetizer Portions

2 pounds Plum Tomatoes, seeded and chopped
4-6 Tbsp. HAIN® Extra Virgin Olive Oil
3 Tbsp. Basil or Parsley, chopped
1 bunch Scallions, chopped
2 cloves Garlic, minced
Salt and Pepper to taste
18 oz. TERRA® Red Bliss® Potato Chips, any variety

1. Combine all ingredients except chips in a bowl. Season with salt and pepper and refrigerate at least 15 minutes.

2. Per order, place 1 1/2 oz. of TERRA® Red Bliss® Potato Chips on a plate and top with 1/2 cup of mixture.
