Artichoke, White Bean and Roasted Garlic Salsa

1 head garlic
1 lemon
1/4 cup extra virgin olive oil
1 can artichoke bottoms, diced
1/4 cup roasted red pepper or pimientos, diced
1 can white beans, rinsed
1 small red onion, finely diced
3 Tbsp parsley, chopped
kosher salt and freshly ground black pepper

Wrap the head of garlic in aluminum foil and bake in a 350° oven for one hour. When garlic is cool enough to handle separate cloves and squeeze out the roasted garlic into a bowl. Add juice of one lemon and with a whisk add oil in a steady stream. Add remaining ingredients and mix well. Serve on top of Terra Vegetable Chips.
