This tantalizing combination of squash with a touch of citrus on crisp Terra® Sweet Potato Chips makes a mouth-watering highlight at any event.
1 small butternut or acorn squash, about 2 pounds
1 Tbsp orange juice
1 Tbsp butter or margarine
1 tsp orange rind
1/4 tsp allspice
1/2 cup water
1 6-oz bag Terra Spiced Sweet Potato Chips or Terra® Spiced Taro Chips
Wash, quarter and scoop out seeds of squash. Place in baking pan, cut side down. Pour water over top of squash. Bake at 400° F for 1 hour, turning over after 30 minutes.
Scoop out squash meat from skin and mix in blender or food processor on high until smooth (1 minute). Stir in remaining ingredients (except Terra Chips). Cover and refrigerate 30 minutes or until ready to serve. Spoon onto chips and top with ground cinnamon or grated orange rind.
