Blissful Bruschetta

1 lb ripe plum tomatoes (about 6), seeded and chopped
2-4 Tbsp HAIN® Extra Virgin Olive Oil
2 Tbsp chopped fresh basil or parsley
1 clove garlic, minced
Salt and Pepper to taste
1 5-oz bag TERRA™ Red Bliss Potato Chips, any variety

Combine all ingredients except chips in a bowl. Cover and refrigerate at least 15 minutes or until ready to serve. Serve on top of your favorite variety of TERRA Red Bliss® Potato Chips. Makes about 2 cups.
