3 medium potatoes, peeled and sliced 1/4 inch thick
3 red bell peppers, seeded, cored and cut into halves
2 medium zucchini, sliced 1/4 inch thick
1 small eggplant, peeled and sliced 1/4 inch thick
1 medium onion, cut into quarters
Hain vegetable oil for brushing
1 cup crumbled feta cheese
1 teaspoon fresh thyme, chopped
1 cup Terra Wild Mushroom Medley Stix
Dressing
2 tablespoons Hain extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
2 cloves garlic, minced
1/4 cup fresh basil, and toss with the grilled vegetables
Salt and pepper to taste
Preheat grill.
Brush prepared vegetables with oil and grill for 2 to 3 minutes each side or until tender. Set aside to cool.
Cut the red peppers in smaller pieces. In a large bowl combine all dressing ingredients, except the fresh basil, and toss grilled vegetables.
Place dressed vegetables in a large salad bowl. Sprinkle Terra Stix, basil and feta cheese on top. Serve immediately.
