Spiced Sweet Potato Chips Stuffing with Sausage and Sage

Try using Italian sausage and Terra® Spiced Sweet Potato chips to add an exotic twist to a Thanksgiving favorite.

1 1/2 lbs fresh Italian sausage (sweet or hot)
6 large eggs, beaten
1 cup bread crumbs
1 1/2 tsps rubbed sage
3/4 tsp black pepper
dash of nutmeg
1 Tbsp butter
1 6-oz bag Terra® Spiced Sweet Potato Chips

Pre-heat oven to 325 degrees. Break meat into chunks and sauté in a skillet over medium high heat until golden brown.

Remove the meat and place in mixing bowl. Break Terra chips up into small flakes. Add the flakes, eggs, breadcrumbs, sage, pepper and nutmeg to the meat. Mix thoroughly with hands.

Butter casserole dish to hold a fairly thick layer of the stuffing. Place the mixture in the dish, cover tightly in aluminum foil and bake in oven for 45 min. Serve hot.

BAKING TIME: 45 minutes
