This sophisticated recipe, served with Terra® Vegetable Chips, makes a very delectable sandwich.
3/4 lb tomatoes, finely minced (about 1 cup)
1 Tbsp finely minced scallion
2 heaping Tbsp finely minced cilantro
12 slices nut bread
12 oz goat cheese
12 thin slices of turkey (about 1/2 pound)
2 medium avocados, peeled, pitted, and cut into thin slices
1 6-oz bag Terra Vegetable Chips
Mix together tomatoes, scallion, and cilantro. Season to taste with salt and pepper. Spread each of 12 bread slices with 1 ounce of goat cheese. Top 6 slices with a slice of tomato mixture.
Top that with thin layer of avocado slices, seasoned with salt and pepper. Top with remaining slices of turkey and cover with remaining 6 slices of bread, spread with goat cheese. Cut each sandwich in half and serve with Terra Vegetable Chips.
