Artichoke, White Bean and Roasted Garlic Salsa

INGREDIENTS
  • 1 head garlic
  • 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 can artichoke bottoms, diced
  • 1/4 cup roasted red pepper or pimientos, diced
  • 1 can white beans, rinsed
  • 1 small red onion, finely diced
  • 3 tbsp. parsley, chopped
  • Salt and Pepper to taste
  • 1 bag TERRA® Origional Chips

 

DIRECTIONS

Wrap the head of garlic in aluminum foil and bake in a 350° oven for one hour. When garlic is cool enough to handle, separate cloves and squeeze out the roasted garlic into a bowl. Add juice of one lemon and with a whisk add oil in a steady stream. Add remaining ingredients and mix well. Serve on top of TERRA® Original Vegetable Chips.
